The Idea
We’ve prepared the room, the table, the pantry. Our community gives it life. You are the reason to open the jar, set the table and light the fire.
The preparation for this meal did not begin today.
It began long before — in the preserves set aside to improve, the lives of the wild fish, and in the slow growth of the wood that now feeds the fire.
This menu is about the sea, the rivers around Brinkburn and the plants that grow around them
Wine and Drinks
Alongside dinner we offer two choices of beverage pairing.
If you’d like to opt for wine, our sommelier Martin Waugh has crafted a pairing for this menu. Four glasses chosen to highlight the nuances and flavours of Tom’s cooking. From makers who produce exciting wines with care and passion. Martin, also known as The Northern Sommelier has returned to region after working in renowned restaurants up to 2 Michelin stars. This pairing is available as an add on to be selected at the same time as booking your ticket.
If you prefer to not select the wine pairing, we offer complementary non-alcoholic drinks with your menu instead. Written in italics below the food descriptions below, they are a set of seasonal and preserved beverages made by Tom and Martin specifically for each meal.
The Meal
Hot smoked trout, hash brown and elderflower
Langoustine and pineappleweed tea

Hake and cuttlefish cooked in caramelised butter, koji and yoghurt sauce, lovage, wild garlic and ground elder salad

The meal will be held at Brinkburn Northumberland, 2-3 Brinkburn Lodge Cottages, Longframlington, NE65 8AR
It will begin at 6:30pm. You’re welcome to arrive any time time after 6:00pm
A vegetarian menu is available and omissions based on allergies are possible, but other dietary requirements such as gluten or dairy free are not possible.
In the future, there will be menus for people of all tastes and diets; meals based entirely on plants, without wheat, and more.
Tickets are non-refundable but transferable. If you do transfer your ticket to someone else, please let us know any relevant allergies associated with the new guest at info@theeldertree.net
You will receive a confirmation by email, but you need only tell us your name (or the name the ticket was booked under) at the event, and we will know who you are.
