The Idea

The preparation for this meal did not begin today.

It began long before — in the preserves set aside months ago, in the careful husbandry of the animals, and in the slow growth of the wood that now feeds the fire.

At Brinkburn, everything carries the influence of time.

Spring has begun, but it has not yet fully arrived. The air still holds a trace of winter, and many ingredients are still finding their way to the table.

So this menu sits between seasons — one foot in the depth and comfort of winter, the other in the brightness and promise of spring.

We believe the right quality and quantity of time shapes not just food, but how we gather around it.

You will be seated at tables of six.
Enough to feel at ease, but not so many that the moment is lost. Space to connect, to share, and to meet others — without hurry.

The Drinks

Seeing as many of our guests will be driving to get to us, we want drivers and passengers to take the same enjoyment from the evening. That means a meal where alcohol isn’t served.

Included with your ticket will be several different non-alcoholic beverages on your table.

Foraged in season. Fermented over time. Watched, adjusted, left to develop.

They come from the same place as everything here — the surrounding land, and the way we choose to work with it. Prepared in advance, not on the day.

Each one carries something of the place. And something of when it was made.

The Meal

Rhubarb juice, hogweed seed oil.

Pork jowl, plum jam and turnip.

Cheese made this afternoon, tomato miso and garden herbs. 

Skewer of preserves made over the last two years.

Spruce shoot soda

New season plants charred for a few seconds, smoked butter sauce.

Citra hop kombucha

Deer sausage, smoked beetroots, butter beans, deer broth, caramelised butter

Elderberry and smoked tea

Cream set with birch bark, birch syrup, brambles preserved in brandy, wood sorrel

Apple, oak and honey

The Details

The meal will be held at Brinkburn Northumberland, 2-3 Brinkburn Lodge Cottages, Longframlington, NE65 8AR

It will begin at 7:30pm. You’re welcome to arrive any time time after 7:00pm

We will try to seat parties who book together at the same table. For pairs of tickets purchased at the same time this will always be possible. However, for larger parties, it cannot be guaranteed

A vegetarian menu is available and omissions based on allergies are possible, but other dietary requirements such as gluten or dairy free are not possible.

In the future, there will be menus for people of all tastes and diets; meals based entirely on plants, without wheat, and more.

Tickets are non-refundable but transferable. If you do transfer your ticket to someone else, please let us know any relevant allergies associated with the new guest at info@theeldertree.net

You will receive a confirmation by email, but you need only tell us your name (or the name the ticket was booked under) at the event, and we will know who you are.
